Usage of Citrus Pectin   

1:  High methoxyl pectin DE is more than 50%, fast gel,high gel temperature,mainly for the high sugar, acid jams, jellies and gel jelly.

2:  Based on features of jam kinds, in high soluble solids jam (60%min) ,pectin recommended dosage is 0.2 to 0.5%, can improve fruit floating phenomenon.
