What is yeast extract(YE)

Used Yeast(Saccharomyces cerevisiae)as material, used enzyme inside yeast or additonal food grade enzyme, after Autolyzed and separation, contains the solution part inside the yeast like Amino Acids, Peptides, Nucleic acid. It may contain other ingredient to adjust, and process by Maillard reaction in the later stage . Yeast extract have the food ingredient property, it is clean label in the ingredient list.
